I whipped up a recipe that’s been in the family for many moons earlier this week and decided to share it with you. Poppy Seed Chicken is a casserole made with lots of love or as I call it, butter.
Here’s what you’ll need:
4-6 boneless chicken breast
1/2 cup cream of chicken soup
1 pint sour cream
1/4 cup milk
1 sleeve Ritz crackers
poppy seeds
1 stick of butter (melted)
salt
pepper
First you’ll want to preheat the oven to 350 degrees. Next you’ll boil the chicken which should take around 20-25 minutes. Be sure to salt and pepper the water you boil the chicken in, it’s important to the flavor of the dish.
While you’re boiling the chicken combine cream of chicken soup, sour cream and milk in a bowl and mix well. After that’s mixed you’ll want to crush the sleeve of crackers in a ziplock bag or with a fork in a bowl.
Once the chicken is done boiling place the pieces into a casserole dish and use two forks to shred the chicken along the bottom of the dish.
Next pour the cream of chicken soup, milk and sour cream mixture on top of the chicken. Feel free to add some fresh jalapenos to this mixture to spice things up. Use a spatula to spread the mixture evenly. Sprinkle the crumbled Ritz crackers across the top, followed by the poppy seeds on top of the crackers. Now it’s time for every southerns favorite ingredient, drizzle the melted butter over the entire dish and we are ready to go in the oven!
Bake the casserole for 30 minutes at 350 degrees. After 30 minutes I like to set the oven to broil for a few minutes to crisp up the buttery cracker topping. Good sides with this dish would be southern style green beans and cornbread as pictured below. Remember, there’s no nutritional guide on the side of this dish so it’s completely healthy.
